Black beans in red gravy

This recipe is heavily inspired by the recipe Black Eyed Beans in Gravy, an excellent book in The Spice Collector's Cookbook. Buy it here.

An easy and very healthy Indian inspired chili. Serve with some yogurt (Greek or not, it's your choice).

Recipe

Initial spices

  • Some cumin seeds
  • Ground coriander

Stuff to saute

  • A few garlic cloves (minced)
  • 2 red onions (chopped up)

Tomatoes

  • 4 tomatoes (chopped up)

Black beans

  • 2 cups black beans (extra soft)

Later spices

  • Some Kashmiri chili powder
  • A little more cumin
  • Some ground ginger
  • About 2 tsp salt
  • Some turmeric
  • Some cilantro
  • Some lemon juice (yeah it's a spice)

Instructions

  • Saute the initial spices
  • Saute the garlic, then the 2 red onions after a minute
  • Add the 4 tomatoes and turn up to high heat for 10 minutes
  • Add the black beans and crush 10% with your stirring spoon
  • Add all of the later spices
  • For best results, let sit under low heat for a little bit
  • Enjoy with some basmati rice and yogurt
